• Chef's Knife - Whether you choose a Japanese blue steel chef's knife or one made of a different material this knife will handle close to ninety percent of your cutting. One that has an eight to ten inch blade is perfect to get the job done and provide you with plenty of great ways to cut food in the kitchen. This is the perfect knife for chopping and dicing, but not for skinning meat or vegetables, there are other knives for that purpose.

• Paring Knife - This little knife is great for slicing and mincing smaller items where the Chef's Knife is too large.This is the perfect knife for peeling potatoes or fruits as well. Not meant for harder foods such as carrots the paring knife is the companion to the Chef's Knife.

• Serrated Knife - Many chefs do not like the serrated knife because they are difficult to sharpen and some professionals won't even touch them, which make them disposable. The Serrated Knife is one that is great for cutting through breads and foods with a waxy surface. A Serrated knife that is about six inches long is great for just about any bread and gives you a knife you can force in easily.

• Boning Knife - The Boning Knife is a long thin blade that is meant to help cut the bones out of meat and fish. Many times this knife has a flexible blade to allow you to get all the meat off the bones.This knife gives you the ability to get into the meat and really get everything off the bones so you have little waste. If you do need to cut through bones, this is not the knife for the jobs so don't expect it to get through any bones, but it's great for going around them.

• Honing Steel - Running your knife along the honing steel each time you use it will help keep the fibers aligned and give you a cleaner cut. This is not a sharpening device so don't expect an improved sharpness.



When you are looking for the right blue steel chef's knife or any other knife for your collection it's a good idea to find a place you can actually test the knife out and see if it's going to work for you. Some retails will allow this. The right collection of knives can give you years of great performance in the kitchen in order to have the most enjoyment out of your cooking time while preparing family meals.
